It's one of those mornings.....the air is "pre-autumn crisp" and I need something hearty for breakfast. Thank goodness I have some blueberries, (I could have used huckleberries I have a few of those.)
I love this whole wheat pancake mix from my friend Beth Pocock Shirley. I think you will too!
WHOLE WHEAT PANCAKES
1 1/2 cup whole wheat flour
1 1/3 cup milk
2 eggs
3 TB brown sugar
3 TB oil
1 TB baking powder
pinch of salt
I like to eat a few hot out of the pan with just butter, like a piece of toast, then a few with berries and maple syrup. Just right for this kind of morning.
